It is kind of bulgur taking place among the special products of South east, especially in Gaziantep and obtaining from immature green wheat grains. The grains grow mature and became hard in wheat ears. They have not been dried completely yet. These ears are collected when they are green, and they are dried with fumigation method by burning the stalks on the fire. During drying operation, the grains becomes sooty with the smoke of the stalks and nice aroma and odour emerged. Its pilaf cen be prepared by mixing with other bulgur types.
